The 1893 founded Collery is a historic House rooted in the very heart of Champagne, Aÿ Grand Cru. Today, the maison is being revived with a clear vision: to honour its heritage while expressing Grand Cru terroir through precise, thoughtful winemaking.
While the wines see fermentation and ageing in oak, the wines are never “woody.” Instead, barrel work is used as a tool for texture, structure and aromatic complexity. In this master class by the House’s director Romain Leveque, we explore this philosophy through a unique comparative tasting, sampling three Pinot Noir base wines from the 2025 harvest: same vineyard, same harvest date, same pressing. The only difference is vinification. We reveal how the choice of container - stainless steel, foudre or barrel - shapes the wine’s structure, energy and overall profile. We then bring the wines together in a live blending session, demonstrating the art of champagne blending. The master class concludes by linking this experiment directly to Collery’s champagnes, offering a deeper understanding of how terroir, vinification and blending come together in the finished wine.
With a background in business and management, Romain Lévêcque joined Champagne Collery in 2018. As Director of this historic maison undergoing a revival, he has been instrumental in shaping its commercial strategy and crafting a contemporary expression rooted in Champagne’s classic Grand Cru terroir.
