Founded in the heart of Aÿ Grand Cru in 1860 by Edmond de Ayala, Champagne Ayala preserves a distinctive know-how in which each cuvée expresses the elegance of Chardonnay, the House’s signature grape variety. Julien Gout belongs to a new generation of Champagne winemakers, guided by strong environmental awareness and deep respect for terroir. In this masterclass, Julien invites guests on a journey through time with a selection of Blanc de Blancs from distinct vintages, offering a unique perspective on Ayala’s mastery of Chardonnay across different seasons.

Each wine is a blend of Grands Crus and Premiers Crus, expressing the typicity of its vintage through the House’s hallmark low dosage. The 2019 vintage shines thanks to the exceptional sanitary condition of the grapes. The more challenging 2016 growing season is interpreted with elegance through Ayala’s limited-volume blend, revealing the solar character of the year. Considered one of the most remarkable harvests of this millennium, the 2012 vintage combines depth, complexity, and finesse. Then we get to taste the highly acclaimed 2008 vintage, whose perfect balance of sugar and acidity results in a truly outstanding Blanc de Blancs by Ayala. The final treat is the long-aged blend from the warm 2005 year of rich champagnes.   

Appointed Cellar Master of Champagne Ayala in 2022, Julien Gout brings together continuity, precision, and innovation, guiding the House’s wines while embodying its core values of commitment, humility, and sharing. Born in Épernay in 1989 and raised in Romery in the Vallée de la Marne, Julien has always lived at the heart of the vineyards. Coming from a family of winegrowers and surrounded by oenologists, his passion for wine developed naturally from an early age.
